Kick your Norway bucket list with me in 2027! We are off to Norway, and Svalbard, the coastal kitchen, the northernmost pub/restaurant/baker/cellar/post office in the world. The best way to see Norway is on a ship as we take you into the most famous fjords, the quaintest of villages and to some of the most iconic locations that Norway has to offer.

From the world's northernmost restaurant to the herb-scented galleys of the Norwegian coast and the storied fjords, this journey is built for travellers who taste their way through a destination. Twelve nights on land and sea, trace a single thread; Arctic ingredients, coastal foraging, and old Norwegian hospitality, from 78 degrees north all the way south to Bergen with a very good chance of seeing the northern lights. I have been working on this foodie trip for well over a year, and I am so excited to finally release it. I know these places will not last, so reserve your bucket list place quickly.
Your deposit here represents only that, a deposit to hold your cabin and hotel rooms for TWO PEOPLE. We are only booking 12 twin or double cabins aboard the Trollfjord ship by Hurtigruten. My site will only accept bookings in pairs from 2 up to 12. There is a single supplement by application only.
You'll need to fly into Longyearbyen Svalbard to join us on September 4th 2027. You can fly out of Oslo on the 16th of September. I do suggest a couple of nights in Oslo either on the way in or out, it is amazing as well.
BUT READ ON:
The entire trip is 13 days and 12 nights and includes all travel throughout Norway and extra land content as described. The total tour is $13,822 AUD pp and will need to be paid in full by April 30, 2027.
The cabin class on the ship is Arctic Superior; Ranging between 10 to 22 m², designed for up to 2 passengers. Most feature a comfortable double bed, while some configurations offer separate twin beds (with one bed occasionally doubling as a sofa).
Location: Positioned on the middle and upper decks for quieter surroundings and better views.
Views: Full-view windows standard in most, though select promenade-level options may have partially obstructed views facing the walking deck.
4 September 2027 — Arrival in Longyearbyen
Touch down in the world's northernmost town and transfer to the Radisson Blu Polar Hotel, your Arctic oasis and base for two nights before the ship departs. Nestled in the heart of Longyearbyen on Norway's largest island, and just 1,300 kilometres from the North Pole, the Radisson Blu Polar Hotel, Spitsbergen offers an unforgettable adventure in the Arctic wilderness. Surrounded by majestic snowy peaks and glistening glaciers, this remote yet welcoming retreat welcomes you, as you explore the world’s northernmost town, where civilization meets the wild.
One our two nights is reserved for a visit to Huset — the world's northernmost restaurant, and reason enough on its own to add these two nights. Set in a building that has served as Longyearbyen's church, school, cinema and post office since 1951, Huset is new Nordic fine dining at its most extreme: a menu built on hyper-local Arctic ingredients; reindeer, seal, ptarmigan, mountain sorrel, kelp, paired from one of Scandinavia's largest wine cellars. It's a meal that could only happen here, and a fitting overture to a cruise built around Norwegian coastal cuisine.
Dinner at Funktionærmessen Restaurant and a champagne tasting is our other evening well spent in Longyearbyen. With an amazing tasting menu and unsurpassed views of the valley.
There are some select tours available for you to book separately HERE for your time in Longyearbyen. Visit the 'Doomsday' seed vault, where every seed on the planet is stored in arctic permafrost, just in case! Meet the wildlife, (though you cannot leave the township on foot without a gun carrying guide due to polar bears being greater in number than humans!) Dog sled your way across the permafrost for some amazing uninterrupted views and of course the pleasure of some time with the amazing dogs that just love their work and waffles and hot cocoa at the end to thaw out!
6 September 2027 — Embarkation
Transfer from hotel to ship and board MS Trollfjord for the Svalbard Line South — seven nights sailing from Longyearbyen to Bergen, all-inclusive, tracing Norway's historic coastal route via the Arctic research settlement of Ny-Ålesund, the wild cliffs of Bjørnøya, the Lofoten Islands, and a scenic sailing into Hjørundfjord. All meals are included on board and free flow drinks in the restaurants and bar are also included.
Onboard, the food is the itinerary. MS Trollfjord carries three distinct dining venues, each telling a different piece of the coastal story:
- Flora — the main restaurant, named for Norway's edible herbs, berries, mushrooms and flowers. Buffet breakfasts and lunches give way to plated dinners built around whatever the coast and season are offering.
- Brasserie Árran — named for the fire at the heart of a traditional Sámi lavvo tent, this is Norwegian brasserie cooking with a Sámi thread running through it. Dine here any lunch or dinner, they do amazing burgers and book ahead for amazing aged steak or King Crab meals...I recommend all the trimmings.
- Røst — the ship's Arctic fine-dining room, helmed by the most senior chefs on board. Named the world's best restaurant by sea, you can add a meal here on request at your own expense.

Onboard, after dark
As the Arctic light fades, the two-storey 1893 Bar — set within the ship's panoramic lounge, all floor-to-ceiling glass over the top decks — comes into its own, pouring Norwegian aquavit, craft beers and Nordic-inspired cocktails. For something more intimate, the Espolin Johnson Lounge offers a quieter spot for a nightcap, named after the Norwegian artist whose work features throughout the ship. Between the two, it's the natural place to toast the day's coastline, whether that's Bjørnøya's cliffs, a Lofoten sunset, or the first stars of the Arctic night. There is no guarantee of a sighting of the northern lights at this time of year, but it has happened! We were there in August and just missed the lights as the darker nights began after we had sailed south.
Alongside the restaurants, the Expedition Team runs onboard cooking demonstrations as part of the ship's daily programme — a chance to see how the kitchen turns whatever's come aboard at the last port into that evening's menu.
13 September 2027: Disembarkation in Bergen
After saying farewell to the ship, we'll transfer you to our hotel so you can drop off your luggage and settle into Bergen. Grab a coffee at one of the nearby cafés (we'll send you our favourites when you book), then we'll meet again at 10.30am for our foodie walking tour of this beautiful harbour city.
Your Bergen food walk includes:
- A private guided walking tour of Bergen

- A drinks tasting at Siderbar
- …and a few more delicious surprises along the way
The rest of the afternoon is yours to explore Bergen at your own pace. You'll find great shopping, wonderful art, Viking history, fascinating museums and plenty more to eat.
In the evening we'll take a short stroll together to the Fløibanen funicular and ride up the mountain into the forest for our final dinner together. We'll gather around the chef's table at Schou, where the chefs will talk us through each ingredient and dish as they serve a four-course tasting menu. Set among the trees, Schou brings nature and culture together on the plate, and the meal is only part of the experience. Once we're well wined and dined, we'll escort you back down the mountain for one last drink at the hotel or somewhere nearby before we say goodnight.
14–16 September 2027:
We'll transfer you to the railway station to start the famous Norway in a Nutshell journey. You'll ride the Bergen Railway across the high mountain plateau, then take the dramatic Flåm Railway down to the fjord. From there you'll cruise the Nærøyfjord, one of Norway's narrowest and most spectacular waterways. You'll spend the night in Flåm.
The next day, the Nutshell route takes you on to Oslo, where an overnight stay with breakfast is included to round off the trip.
On the morning of the 16th, we'll wave you off to your next adventure. We highly recommend staying on in Oslo for a few days if you can. It's a wonderful city, full of museums, art galleries and fantastic food!

There is a medium level of fitness required for this trip, you should be able to climb a flight of stairs unaided and walk at least 1km without any difficulty. You'll also need to be able to handle your luggage independently on and off trains so we strongly suggest packing light.
